Harvest Period: Hand-harvested in the middle of September
Vinification: Gentle pressing of the clusters, cryomaceration on the skins to extract fruit aromas and varietal characteristics of the pecorino grape, followed by static cold-settling of the must, then fermentation in stainless steel with temperature control. Subsequently, the second fermentation takes place in stainless steel with Charmat system. 4- 6 weeks bottle refining
Sensory Profile: Brilliant straw yellow with fine and persistent perlage. The bouquet is delicately floral, with notes of citrus and tropical fruit.
Food Pairing: A generous-sized palate offers rich, full flavours that are vibrant and crisp, and the finish displays the classic note of almond. Delicious as an aperitif. Excellent with fish, sushi and grilled vegetables
